Description of Tasting:

Reservations Will Open in Early January - Save The Date Now!

The dead of winter is the perfect time to pair some fascinating and hearty wines with that most classic of mid-winter dishes:  cassoulet.  And to spend a warming evening with friends, fellow wine lovers, us, importer Ed Addiss of Wine Traditions and – of course! – Chef Jaquest Imperato.  So bundle up and join us on Wednesday and Thursday, January 5 and 6 for the annual Chain Bridge Cellars Cassoulet  Feast!

What is cassoulet?  It's a rich, deeply flavored, casserole of meats like garlicky sausage, duck confit, pork and more buried in creamy white beans.  While found all over southern France, its most famous home is in Toulouse where the deep, round, earthenware pot with slanting sides called a "cassoulet" gave its name to the dish.

Working with our favorite specialist in wines of the southwest of France, Ed Addis, Chef Jacques has created a stunning menu that will warm you up with smoked salmon and bay scallops freshened with Asian pear and then wind you down again with a classic millefeuille – layered puff pastry – with raspberries and a bit of chocolate. The perfect frame to set off Jacques’s cassoulet!  Here’s the menu:

Homemade smoked salmon, asparagus cigar
