From one of the most important "grower" estates, this is always a blend of 70% Chardonnay and 30% Pinot Noir with 50% current vintage (here 2021) with 50% from the two previous vintages (here 2020 and 2019). As with all Vilmart’s non-vintage cuvees, the wine is fermented and aged in old, large, oak foudres with malolactic fermentations blocked and 10 months in barrel before blending and secondary fermentation and ultimate disgorgement at around 30 months and finished Brut at 7 g/l.
Wine Spectator’s 94 point review of this release does a great job of telling you what to expect: “There's a vibrant buoyancy to this graceful Champagne, with the finely detailed mousse and mouthwatering acidity serving as a springboard for flavors of ripe cherry, tangerine zest and macadamia nut, plus fragrant notes of lime blossoms, ground ginger and cardamom. Long and minerally on the plush finish.” You can hold this for a decade if you like, but it’s awfully delicious now!
For You If: To paraphrase importer Terry Theise, you like your Champagne to whisper with urgency rather than shout; you want Champange earns your attention but doesn't demand it.
Not For You If: You want to taste the oak - this is very subtle and more about shaping, than flavoring, the wine.
