Rivesaltes is famous for its aged vins doux naturels - wines made sweet by adding brandy to stop fermentation before sugar is all turned into alcohol. Unlike Banyuls to the south, though, there are many different styles of Rivesaltes made from grapes of all colors (white, red, and even pink!), from aromatic Muscat grapes and more robust Grenache, and aged with and without the impact of oxygen. A sweet puzzle!
This represents the most classic style of Rivesaltes, made from Grenache Gris and aged in cask without topping up for years and years (around 20 in this case). It was made by Hervé Passama who began bottling Rivesaults from his family's vineyards in 1986 before the winery's closing on his death in 2014. The cellar here varies from 50-80 degrees depending on the season, which aids in evaporation and concentration of the wine and adds wild complexity. The vivid acids perfectly balance the dried stone fruit and sweet caramel flavors, pulling you back for sip after sip.
