Organic/Bio  Freshness is the name of the game with this delectable Cava; and why wouldn’t it be with vineyard sites on coveted limestone, marine soil and only a short car ride from the Mediterranean coast. Blended with the Spanish grapes of Xarello, Macabea (Viura), and Parellada, the wine shows the personality of truly delicious Cava. Done in the traditional method, the wine boasts plenty of soft pineapple and citrus notes with a kiss of orange peel. The bubbles are refreshing and delicate showcasing the quality 12-month lee aging, aka perfect temperature control. The sparkling rounds out to a clean, dry finish with plenty of long-lasting flavor.  We think some paella, fresh seafood, or some grilled summer asparagus would go very well with this wine.
