Organic/Bio Lower ABV If St. Bris was still part of Chablis – as it was through the 1800s – this wine wouldn’t exist. But you get to mess around beyond Chardonnay here, as the Goisot does here with Burgundy’s “other’ white grape, Aligote. In the rest of Burgundy, Aligote is lean, mineral, a bit neutral and mainly used as a base for Kir. Here’s it’s showing volume and amplitude beyond the 13% alcohol and loads of leesy/toasty/yeasty character with lemon and green peach fruit and a mouthwatering, lightly nutty, finish. Try it with seared scallops, aged cheeses and anything in brown butter.
For You If: You like the minerality of wines like Chablis or Muscadet and want a bit more body and texture; you want lots of flavor in your whites but not lots of fruit or any oak at all.
Not For You If: You’re looking for lean and crisp – this hits on “crisp” but is hardly lean; you’re after something fruity and/or oaky.
