Perrine Fresne’s very first Champagne is a wine shaped like a teardrop, entering your mouth broad and generous and then rapidly contracting to an almost painfully intense finish that stays on your palate for a long, long, time. The initial breadth and ripe pear, white cherry and juicy lemon from come from her impeccably farmed 1.7 acres of 45 year-old, 1er cru, Pinot Noir Chardonnay and Meunier and the 30% reserve wines she took from her father’s perpetual reserve. The snap and intensity at the end come from the cool Sermiers climate, blocking malo on the 70% of the wine from 2020, and finishing at a crisp but perfect 2 g/l Extra Brut dosage. The beauty, harmony, purity and excitement? Well, I think that comes from Perrine herself. A brilliant wine and name to follow.
