If all you know about Amontillado is that it’s mentioned in an Edgar Allan Poe short story, it’s time to experience the real stuff. And this is it. Amontillado starts its journey as a “Fino” Sherry, made from super-tangy, bone dry, Palomino white wine in a partially filled cask with a layer of pillowy flor mold covering the top and preventing oxidization. For Amontillado, the flor is broken, allowing air to reach the wine and spur the development of a deep amber color and aromas and flavors of toasted nuts, burnt orange peel, ginger, spice and more.
This a fabulous example crafted by the Rivero family from wine that’s been in barrel for an average of 40 years (and all at least 30 years). It’s wildly aromatic, hugely delicious, bracing, almost salty on the finish and – again – bone dry. You can cellar unopened bottles for 20-30 years for even more complexity. And, once you’ve opened it for a nip, it stays fresh and slowly develops further over at least 6 months (the longest I’ve been able to wait to finish a bottle). It’s actually a little tight on first pour, so give it 20-30 minutes in your glass to really get going. Just marvelous stuff.

There is charred quince and orange peel and salted mandarin and pickled lemon and roasted pecans and walnut skin. It's heavy silk and fireside copper gleam and throat-warming and throaty. It is so vividly alive that the energy of it makes my fingertips tingle. Breath-taking.”
