A beautiful Manzanilla from Ramiro Ibañez and Willy Pérez, who are 20 years into a project to restore classic Sherry styles and (literally) write the book on Sherry's past. Production is tiny, with just 125cs bottled each year from a 12 cask Solera with an average age of 3.5 years. Wildly layered aromatics and flavors of green olive, green almond, crushed sea shell, exotic citrus, toasted nuts and more. Finish super long, salty, and fine. Pretty brilliant stuff.
For You If: You enjoy Fino and Manzanilla Sherry and are looking for one with WAY more complexity and distinctive character that you'll find in more widely available wines.
Not For You If: Well, if you don't already know and like Fino/Manzanilla, this will be quite the shock to the system! But give it a try with olives, nuts, even sushi and you may just become a fan.
