Organic/Bio It's probably easiest to think of this as a cross between sweet Olorosso and 20 year tawny Port, but it’s even more than that. Sierra Morena wines were sold as Sherry until the 20th Century and this is very old-school Sherry indeed – from 100% Aris picked super ripe, fermented in clay, and racked into barrels with 5 year-old wine to stop fermentation. Never fortified, the alcohol levels increase during 5 years of aging as water evaporates from the wine in barrel. At once super rich and wonderfully vibrant, the raisined fruit and burnt orange peel go perfectly with deep, nutty, notes. The finish is vibrant and very, very, long. Lovely with crème brulee, candied nuts and, especially, bleu cheese or Stilton.
For You If: You have a mouth, a heartbeat, and desire to smile – we really cannot imagine who isn’t going to love this wine; you enjoy 20 year-tawny Port and want those flavors with a touch more lift and verve.
Not For You If: If you’re 100% opposed to ever drinking anything with any sugar left in it at all…well, then this won’t be for you – but try it anyway!
