Classic Palo Cortado (like this!) starts off life as a Fino or Manzanilla, but begins to age oxidatively after the flor dies off. The official description is a Sherry with the aromas of Amontillado and body of Oloroso, and that's exactly what you'll find here from wines aged an average of 20 years in cask. Rich in feel, bracing in acidity and salty minerality, bone dry, and chock full of toasted walnut, butterscotch, scorched lemon peel and hazelnut, it's fascinating to sip solo and an amazing match for ham or sauteed mushrooms.
For You If: You enjoy bone dry Sherry like Amontillado and Olorosso and want something really delicious and a little inbetween in style.
Not For You If: You only like Sherry when it's a little sweet or, at least, fruity - this bone dry.
