Organic/Bio What do Cognac makers drink for an aperitif or at lunch? Pineau des Charentes! And this is one of the very finest from Cognac's first organic estate. The wine starts with fresh, unfermented, juice from the Cognac white grapes of Ugni Blanc, Colombard and Montils. Then 140 proof Eau-de-Vie de Cognac (un-aged distillate) is added to bring the alcohol up to 17% and prevent fermentation. The "wine" then goes into used Cognac barrels to age three years. The result is a complex, spicy, sweet wine redolent of apricot and dried fruits with just a touch of a kick. Serve chilled or even on ice for a complexly satisfying treat.
