Organic/Bio Lower ABV Take the wild and delicious character of the Brana Ilori, source the grapes from older vines and age 30% in barrel and you get this – what Chablis would taste like if a bunch of Basque wine-people grew and made it.  The energy and saltiness grabs you and the juicy lemon/lime fruit get a touch of roundness from the time in barrel. This will keep getting better in bottle, but how could you wait.

For You If:  You like old-school, pre-climate-change, Chablis that runs more to the lemon/iodine side; you’re looking for a brilliant match for seafood in lemon butter.

Not For You If:   You’re after a solo sipper that will please a crowd – this is distinctive wine for table that’s not for everyone but probably is for you!
