Organic/Bio Eduardo Torres Acosta learned to make wine with his grandfather in Tenerife before shifting his attention to another volcanic island and coming to Sicily in 2012 to work a harvest with Arianna Occhipinti. He’s been making his own wine here since 2014 with a focus on the oldest vines he can find, organic farming, and putting the power of Etna in your glass. This blends fruit from six different small plots, mostly destemmed, and with 80% aged in concrete and 20% in old barrels. The winery is outside the Etna DOC, so the label doesn’t say “Etna.” The wine sure does.

"Darkly alluring, the 2021 Nerello Mascalese Versante Nord smolders up with a blend of crushed plums and black cherries complemented by lovely shades of violet pastille and sweet smoke. Soothingly round and supple, it washes across the palate with a dense wave of ripe red and blue fruits. Saline minerals add a more tactile feel toward the close. The 2021 finishes structured and long, with purple-tinged inner florals and a coating of fine-grained tannins. Yet through it all, the 2021 maintains a lovely inner freshness."
