Think of this as French Pinot Noir with bubbles and you’ll be on the right track. In contrast to Vesselle’s ever-popular Oeil de Perdrix (the lightest rosé Champagne we know of), this is the darkest and most red wine-like, although still loaded with tiny bubbles and stony, minerally, Champagne character. The base is a “bleed” from Vesselle’s red Pinot Noir still wine and is just shut-up beautiful in the glass.
As Vinous wrote of an earlier release, “phenomenally beautiful. Crushed flowers, mint, lavender, red berries and cinnamon abound in a rich, vinous Champagne endowed with magnificent depth and intensity. The flavors are deep and resonant, but it is the wine's bold fruit and supporting minerality that I find absolutely compelling. Frankly, it's hard to put the glass down.” While it’s all too easy to drink this all by itself, it would make the perfect choice for anything you’d enjoy with still Pinot Noir from salmon to duck to poultry (like turkey!).
