Organic/Bio Cabrerisse is in the northern part of Languedoc on the south-facing slopes of the Montagne Noire hills. Meaning the middle of nowhere (we had to look it up, too). Anne Sarda works her vines of up to 60 years old organically and by hand, ferments in concrete with native yeasts, and then ages the wine concrete vats 60-105 years old. And adds a tiny 2 g/hl of sulfur at bottling - just enough to keep the wine intact during travel to your table.
This is 100% Carignan and it's all about Carignan's signature blueberry fruit and slate-like minerality. Two words sum it up. First, "Long" - this thing sails across your palate from front to the way, way, back and sustains on and on. Second, "Crushable." Right now at room temp, it just flows/glides down your gullet. In a few months, give it a chill and slam it home by the tumblerful. Well, in moderation - at 14.7%, it packs a sneaky punch.
For You If: You read all that blather above and thought, "I need to try this;" you know what "glau glau" means and want that.
Not For You If: You want something that tastes fancy, impressive or rich - this is juicy, crunchy, fresh, berry juice dripping down your chin and staining your shirt fun.
