Perrine Fresne’s second NV Champagne matches the quality of the first, but is definitely a different wine. In the cooler 2021 harvest, she leaned into the quality of her Chardonnay (42% of the blend) with her best plots of Pinot Noir and Meunier. Most of the Chardonnay is from 2021 and most of the black grapes from 2020 with half aged in old oak from Domaine Leflaive in Pulingy Montrachet and all of the 2021 wine allowed to complete malolactic fermentation. Dosage is just 3 g/l, so very definitely Extra Brut.
The wine realty sizzles on entry with pinpoint bubbles and a bite of green apple acidity waking up your palate. Tart white peach and crisp apple fruit are framed by toasty, almost nutty, notes, hints of smoke and a powerful chalk and wet stone minerality. The finish is long and flowing and firm, although never austere, keeping the crisp fruit and toast/smoke flavors lingering nicely. It’s ready to drink right now with oysters or simple seafood and will ramp up in breadth and intensity to handle roasted birds and other savory fare over the next few years. This is an exciting wine from an exciting young producer. Just 580 six-packs made.
