Poppy Cabernet Paso Robles has been a customer favorite in the "great value California Cab" segment for years. And every time we pit it against a more expensive Cabernet in a blind tasting (one where tasters don’t know which wine is which), well more than half of tasters tell us they prefer Poppy!
The secret here is the marriage of ripe (but not over-ripe!) fruit from two east-Paso vineyards and a cutting-edge winemaking approach called thermovinification. About half the fruit is heated to 140 degrees, extracting color and flavor and blowing off the pyrazines that can give Paso Cab an unpleasant herbal edge. The thermovinified fruit is combined with fresh grapes and ferments cool to retain fruit and limit tannin extraction. Then the still bubbling free-run juice goes into old oak casks to finish fermenting dry and age 18 months to polish tannins and gain just a touch of spice. The result is a wine of excellent richness, fine depth, and lovely purity of fruit. Blueberry, black cherry, currant, licorice, vanilla, and spice aromas and flavors pair with a round, supple, wine that finishes clean and smooth and remarkably long. A terrific value if California Cab that moves from back deck to table with style.
