Simply the most delicious Prosecco we’ve tasted in years – although nothing about this wine is “simple.” Unlike most mass-produced Prosecco, this is made from 100% organic, estate-grown, fruit from vines on the steep hills of the Veneto’s Valdobbiadene region. The vines are tended and harvested by hand and gently pressed and then the grape juice is chilled to near freezing until it’s time to make small batches of bubbles to meet demand. Then the must is warmed and allowed to ferment in steel tanks, trapping the gas and dropping the sugar to “Brut” levels and, with 4 months resting on the lees, a wonderfully creamy, complex, mouthfeel.
“Pear” is the signature aroma and flavor of Prosecco, and most producers have to let the sugar settle at 8-15 grams/liter to bring that note to the forefront. Here, at just 6 g/l, you’ll find spicy yellow pear aromas with accents of sliced green apple, stone fruit, and lime zest. The flavors are lifted by small, persistent, bubbles that also give the wine a creamy, round, soft, feel on your palate. And let the bold flavors of pear, Golden Delicious apple and nutty brown butter shine and sustain through the crisp, fresh, nicely dry finish. We suggest keeping extra bottles around at all times. One is seldom enough.
