One challenge for no-alcohol wines is replacing the body supplied by alcohol – something that’s all too often done with sugar. Here winegrower Ollivier-Cottenceau starts with what would have been a light white anyway – Muscadet’s Melon de Bourgogne – and then adds texture through lees contact before gentle alcohol removal.
