For more than 150 years, this family-owned Cava house in Calatayud has crafted clean, crisp, Cava that satisfies sophisticates and casual sippers equally well. Their Reserva Cava blends 75% Chardonnay with 25% traditional Macabeo, both aged in oak before resting 18 months after secondary fermentation. Bone dry, crisp, lemony and with attractive yeasty notes that make this as much fun for solo sipping as pairing with all kinds of foods.
For You If: You’re after Cava with a touch of Champagne sophistication with no loss of classic Spanish Cava style; you enjoy sparkling wines with a bit of yeasty/bready/toasty complexity.
Not For You If: You want the fruit-forward directness of a non-bottle-aged sparkler like Prosecco – this shows the benefits and mark of in-bottle secondary fermentation and aging.
