Alain Gautheron makes traditional Chablis – meaning stony, clear, a bit salty and with the fruit in the backseat with minerality driving. His old-vines cuvee is done all in steel and even in a richer vintage, delivers the kind of salty cut and scents of the sea we’re after in classic Chablis. The vintage gives this more roundness than in some years, making it equally delightful with oysters or sipped solo. Georgious.
For You If: You want to drink Chablis that could only be Chablis and not some wannabee white Burgundy from the Cote d’Or.
Not For You If: You’re looking for oodles of super-ripe fruit or oaky spice.
