Organic/Bio Lower ABV We love a delicious and affordable Chablis, and when it is a premier cru, we are sold. Laurent and his son, Camille, have been cultivating the vineyards of Vau de Vey as a generational team. They take pride in every aspect of the process starting with intense care in the vineyard to the delicate winemaking technique, gravity. They even have double basket lugs to bring the grapes in from the vineyard as to separate out that very precious free run juice that may drip.
Vau De Vey is situated on the prized Kimmeridgian soils of Chablis facing south-east catching that much wanted sun in the northern parts of France. 25 year old vines can be found here with meticulous farming practices. All of these little details translate directly into their wines.
The 2022 vintage shows a very energetic and lively wine that plays the notes of Chablis beautifully. Green apple crunch, wet stone, finessed herbs, and complexity lift out of the glass. The palate matches the aromas both in liveliness and flavor depth. As Decanter puts it, there is “plenty of cool, fresh sensations on both nose and palate”. Drinking now would be delicious but definitely shows potential for developing weight and complexity in the bottle.
For You If: You like vibrant fresh wines that sate the green apple jones; you enjoy mineral driven white wines that have a touch more volume
Not For You If: You like riper, tropical fruits in your white wine; if you enjoy fuller bodied white wines that are fruit forward
