Organic/Bio Although a warmer site than Fourchaume, this is always a bit less dense and more steely on first taste. Witgh a little air, you can taste the site’s warm in the fruit, which moves more towards stone fruit than apple/pear. But the citrus and crushed limestone and very well-judged reduction keep things fresh and very “Chablis” through a very lightly grippy and mouthwatering finish. The perfect marriage of ripeness and minerality.
For You If: You enjoy a bit riper flavor profile than found in most of Chablis paired with classic Chablis minerality and cut.
Not For You If: You're looking for tart green apple and lots of iodine - although the latter will come over the next few years!
