Antoine Chevalier’s grandfather and father began planting Champagne vines in 1974 but he is the first of the family to start making and bottling wine. This is organically farmed Chardonnay from the lieu-dit Les Bas du Mont de Fourche in the Vitryat village of the Cote de Blancs. The base wine is aged in old oak casks and then on the lees for 3+ years before being bottled at just 0.8 g/l dosage. Serious, complex, and smoky/toasty, the crisp white-fleshed fruit zings along your palate through a crisp, very dry, finish. Intense, but nicely balanced, and a stunning match for all kinds of seafood.
