Organic/Bio Christophe Mignon is really a Pinot Meunier specialist but here he crafts 100% Pinot Noir into something pretty spectacular. From organically farmed vines in the Valle de Marne and with nearly six years on the lees, this is beautiful from the shimmering coppery color, tiny bubbles, and tart red berry fruit.  A subtle toast note complements the fresh red fruit through the long, very dry, finish. Very stylish, luxurious and delicious. Cork label, too!

For You If:  You love distinctive grower Champagne in a very distinctive package (the label is made of cork!); you want the kind of silky texture and red fruit flavors that you only get from Pinot Noir and long aging.

Not For You If:  You’re looking for easy drinking cocktail champagne – this is hardly austere but it does command attention and finishes bone dry and chalky.
