Lower ABV Still young Vincent Dampt makes very old-school Chablis, picking for balanced ripeness and raising the wines in steel to maximize freshness and minerality. This shows the crunchy green fruit and oyster shell minerality Chablis is famous for, and it will certainly be a delight with shellfish. The extra touch of body and richness from the generous 2022 vintage makes it equally delicious sipped solo and with poultry and rich and tangy cheeses.
For You If: You love the minerality and cut of classic Chablis and would like to share it with drinkers who aren’t ready to be beaten up by their wine; you’re having oysters – especially fried ones!
Not For You If: You’re after something austere – this has 2022’s generosity – or richly fruited – this has lovely crisp green citrus, apple and stone fruit but stops short of fruitiness.
