Lower ABV Just Léa Schaller’s fourth vintage since coming home from Paris, building a winery and starting to bottle a portion of her crop instead of selling it all to the co-op. Her music roots give the winery name (from a Metallica song). The image is a nod to her Swiss-German ancestors; in old German, “Schaller” referred to a town’s evening bell-ringer whose chimes welcomed in the nightly arrival of owls.
The wine is terrific. About 800 cases worth of juice from 40+ year-old vines ferments and ages in steel, giving this old-vine concentration and vivid minerality and cut. Crisp green apple, tangy peach and hints of limestone and seashell show on the nose and palate. Finishes with an attractive salty bite the gets your mouth watering and makes all-steel Chablis so lovely with shellfish and all kinds of seafood.
For You If: You like the crisp green fruit and salty tang of classic Chablis; you want to get to know one of Chablis’s likely next big things before the press catches on.
Not For You If: You want the richer, deeper, fruit of Cote d’Or or New World Chardonnay; you like some oak spice on your Chablis.
