Delphine Laborde's second vintage from this 1.1 acre site overlooking Reims and planted in the early 1970s is crisp, clear and compelling. White fruit, lightly toasted bread and sliced ginger aromas and flavors begin with precision and stay focused and pure through a fine, long, finish. The base wine Chardonnay rests on the lees in tank for 8 months and then in bottle for 48 more, and the 4.5 g/l dosage lets the wine stay fresh without turning austere. With just 1,400 bottles made, this is a small production bottling from someone we expect to become a very big name Champagne winemaker!
For You If: You like your Champagne cool, crisp, focused but not austere or hard-edged; you're after Champagne to flatter delicate white fish - this will enhance, but not run over, the food.
Not For You If: You're after extravagant amounts of buttered toast/nut character - this uses just a touch to add complexity to the pure Chardonnay fruit.
