With around 3,000 cases made, this is Pascal Maillard’s signature wine. It comes from five plots in the village, all farmed with great care and minimal intervention (although they will use commercial sprays when absolutely necessary) by Pascal’s brother, Alain. The fruit is harvested by hand and meticulously sorted before almost all is destemmed and fermented in vat. Unlike many small producers who need to bottle one vintage before the next is harvested, Pascal lets his wine rest 18+ months in French oak, 25% new and the rest one to three years old.
Chorey reds are usually known for their ripe and generous fruit, and Pascal Maillard’s 2021 Chorey delivers that wrapped in an unusually complex savory package. Dark cherry and black raspberry fruit forms the core of the aromas with all kinds of mushroom, smoke, thyme and spice accents. On the palate the sweet, ripe, cherry/raspberry fruit shines with a solid dose of mushroom and what the French call sous bois (underbrush/forest floor) flavors abounding. It really dances on the palate already before fine and firm tannins come up to propel a juicy-fresh finish and make your mouth water for more. Pinot Noir for seared beef, duck, and mushroom dishes here, delicious now and even better in 3-5 years.
