Lower ABV Mersault’s Vincent Boyer and Languedoc’s Emmanuel Lucas de Bar created this project to make wine together in both regions. The fruit here is from Languedoc and the winemaking all in steel. It’s restrained for Sauvignon, showing light green and white citrus aromas and flavors with a bit of green melon underneath. The purity and texture are both outstanding, and the wine glides easily from initial sip to savoring the long finish after swallowing.
For You If: You enjoy the flavors of Sauvignon Blanc in a more easygoing, less overtly assertive, style; you love the texture and glide of good Chablis – the flavors are all different here, but the mouthfeel is close.
Not For You If: You like your Sauvignon Blanc rowdy and boisterous – this is a bit more chill.
